Math Stat is a really good class to take to learn more about foundational concepts in statistics, I would 100% recommend. If you are planning on majoring in Stats you should take it sooner than later because it covers all the "big ideas". There is a lot of math involved (as the name would imply) and a few proofs you will have to know for the exams, but not too bad if you carefully review the slide decks, attend class, and go to office hours if you have questions. The book isn't really needed other than for doing the HW problems, you can learn what you need from the slide decks. Professor Keenan is a great choice for this class because his exams are fair and graded quickly. Also you can bring a formula sheet so you don't really need to memorize any long formulas. He is also extremely knowledgeable about statistics so there isn't any question he can't answer. He cares about his students and does a good job explaining complex material. 6 Problem sets, 2 midterms, and a final determine your grade.
Keenan is the most boring and dull lecturer I've had so far. He'll start each lecture with a random 20 minute monologue that is impossible to follow, write in impossibly small handwriting on the board, then speed through the slides because he thinks he already explained all the material in his incomprehensible monologue. Learn from the textbook for this course; it's all you need to succeed.
The course itself is not that hard. If you did okay in probability and intro stats, this course will not be that bad. Exams are relatively straightforward and curved; problem sets are all out of the book. If you are decent at math/stats, Keenan is probably one of the easier professors to take it with. The material is mostly just proofs of things in stats, lots of calculus and probability, it's all very theoretical. Don't expect lecture to be useful to you.
