I had "Covers, Karaoke, and Memes: Imitation in Music" with Professor Puri and I really liked it! He is extremely passionate and knowledgable about music theory, so if that's something you're into, you're in for some quality convos with him. The class had minimal assignments - a short response to the reading before every class, a longer midterm assignment, and a final group project (all graded very generously). Background in music helps for some of these assignments, but it's not necessary nor is it expected! Only con I could think of is that I wish there were more group discussions, because most of class was him lecturing in front of the class.
